There are two Peach dolls in Super Mario RPG: Legend of the Seven Stars and its Nintendo Switch remake.
One Peach doll is owned by Gaz, son of the Rose Town innkeeper. He uses the doll to recreate many of Mario's adventures. When Mario arrives and plays with him, Gaz has the Peach doll act as the Bowser doll's hostage akin to how Princess Peach is often kidnapped in Mario's real adventures by Bowser.
Another Peach doll belongs to Booster. Booster uses the doll (along with a Mario doll) to plan out his wedding.
