A Rubee is a type of currency found in Super Paper Mario. They resemble small red gems, as do Flipside Tokens. Their name may be a combination of "rubies" and "Rupees", the currency in The Legend of Zelda series.
In Chapter 2-3, Mario and Princess Peach break a vase belonging to Mimi, under the guise of Merlee's maid. Mimi orders Mario and Peach to pay for the vase in Rubees — one million of them, to be exact. Mario and Peach only had Coins on them, however, so Mimi puts them to work to pay off the debt.
