Noki Bay is one of the areas of Isle Delfino, the main setting of Super Mario Sunshine. Noki Bay is located at the north behind the island's "dorsal fin." As the name implies, this area is a home to the Nokis. In order to access Noki Bay, the player has to have collected at least twenty Shine Sprites. Doing so causes a column of light to appear at the pier of Delfino Plaza, and staring up into it transports Mario to Noki Bay, similar to the method used when entering the Tower of the Wing Cap in Super Mario 64.

Noki Bay is notable for having by far the fewest interactive friendly characters of any major area in Super Mario Sunshine. Throughout all of Noki Bay's episodes, the only characters who Mario can talk to are the Noki elder, his grandson, the grandson's wife (who also carries their infant child), and the Raccoon who runs the mudboat rental shop. However, many more friendly Nokis appear in the underwater city in Episode 8, but they cannot be spoken to. Noki Bay is also the only area in the game that cannot be clearly seen from any other location. As such, Corona Mountain is the only other location that can be seen from Noki Bay. If a player in Pianta Village makes their way to the top of the tree next to the spa, it is possible to see the area where Gooper Blooper is fought in Episode 2 and the wall that the path up to the area's waterfall rests on, but no other parts of the stage are visible or modeled.
Noki Bay is one of the areas of Isle Delfino, the main setting of the GameCube game Super Mario Sunshine. Noki Bay is located at the north behind the islands "dorsal fin". The Noki live here in the platforms floating in the bay. The structures have shells on them, possibly because the Nokis carry shells on their backs. Many small square pictures on the cliffs can be pushed in when sprayed, revealing a secret alcove. They are actually switches hiding several hidden tunnels and Blue Coins. The picture switches have six different designs on them, the blank ones making the total number of designs seven.

An old Noki fisherman and his grandson will help Mario throughout the levels, giving him a diving helmet and tips. Gooper Blooper makes a return here at one of the cliffs peaks. He blocks a hole to a room for the ancient Noki King's tomb. Several Noki shells are on the walls, as are two large jugs that hold a Blue Coin each.

Noki Bay has several platforms along the mountain and large pillar-like structures rising out of the water. The pillars have large shells at the top, with one leading to a secret course, and the pillars are connected together by ropes. Before completing Episode 4, the water in the bay is polluted and will damage Mario if he tries to swim in it. In several of the episodes, there are a number of platforms floating in the water, with some being trampolines.

Directly ahead of where the player starts is a large cliff-side with many platforms leading up it. Mario has to make use of Lifts and Wall Jumps in order to progress upward. During the first episode, many of the platforms are covered by goop, and washing away the graffiti on the walls will cause the platforms to reappear. At the top of all the platforms is a hole where a large waterfall is flowing out of. At the bottom of the waterfall is a large cavern where Episodes 4 and 8 take place.
Noki Bay is one of the most beautiful locations on the island, with crystal clear water and mysterious, old ruins. It is here that Eely-Mouth's gingivitis has polluted the waters. The eel is in a huge underwater city that can be reached by a large waterfall. There, Mario can clean the eel's mouth and collect red coins in the relaxing and peaceful surrounding of the underwater Noki City.

To the left of the players starting point is a coastal area where a large ruin is embedded in the cliff. Placed along the cliff are several wall paintings that will recede into the wall and reveal a path when sprayed. At the base of the cliff and along the coast is a Boat Rental shop run by a Raccoon, who according to a nearby sign charges 90,000 coins for his rentals. In the first episode, the shop's mudboat is adrift due to the waterfall being clogged, but in later episodes, the raccoon allows Mario to use the boat for free. After Mario cleans Eely Mouth's teeth and the bay's water is clear again, the raccoon thanks Mario for cleaning the bay.
Mario must collect at least twenty Shine Sprites to enter this stage.

|episode1=Uncork the Waterfall

|summary1=This episode's objective is to defeat the Monty Mole at the top of the cliff.
The player starts out by landing on a platform amidst a purple, polluted Noki Bay. When Mario lands, the player should talk to an old Noki that is waiting on the platform. The old Noki will say that he has heard of Mario before and has a problem, at which point he will show the player an overview of the stage objective. The old Noki will then say that someone has corked the waterfall, which is what he believes to be the cause of the pollution. After talking to the Noki, the player should proceed to a shell-tower base with outcroppings that are used to climb to the first leg of the stage. After climbing these, there is a wicker basket with an adjacent cracked jar. The player should jump on the basket and fill the jar with water to ascend to the next platform. After jumping off the basket, the player should continue to the right until there is a gap. On the wall where the gap is, there will be some paintings that the player needs to spray off that makes two portions of the cliff appear one in front and one above- also, it helps to go to the very edge of the cliff to remove all of the paint. The player should then jump on the new platform and another platform, then spray a small painting on the wall that looks like a wave to make another outcropping appear. The player can then jump onto that outcropping and follow the next platforms up and over onto a section with paint all over it. On the wall will be another painting, which the player should then spray off to make a portion of the cliff appear. Continuing to the left, the player should use another basket-jar combo to jump over to the section that was just created. Then the player should jump over to the right and head up the ramp that leads up left and spray yet another painting off the wall. The player should use the new platform from the painting to wall-jump up to the next section. There is a pool of water to the left that can be used to fill up F.L.U.D.D.'s water tank, but is otherwise a dead end. The player should head over to the right and follow a couple of platforms, spray more paint off the wall, jump upwards from there and head over to the ledge on the left. There will be a trampoline, but it is too big to move so the player has to squirt it to make it small enough to pick up. Now that it can be picked up, the player should jump off the ledge with it and set it down in front of the other wall on the left and jump up with the trampoline. Jumping up a few platforms, the player can see the cork with a cannon on top similar to the one that is the portal to Pinna Park. Inside this cannon is Monty Mole, who the player has to defeat by Squirting bob-ombs to freeze them and throw the frozen bob-ombs at Monty Mole three times.

Episode 2: The Boss of Tricky Ruins
|summary2=This episode's objective is to defeat Gooper Blooper at the top of the ruins.
Gooper Blooper makes a return appearance here. Mario has to find his way into the ancient Noki King's tomb where the Shine Sprite is. To do so, Mario must shoot blocks with water to form paths that he can walk through. Mario must make his way to the top of the cliff using the pathways. The Rocket Nozzle is present in this level, but the player must use the paths he used on the first level of the Noki Bay and find a secret pathway leading off the path to the waterfall. The Rocket Nozzle is a very useful item in this level, as for it can help Mario get higher without using the paths. At the top, Mario must battle Gooper Blooper. Gooper Blooper attacks the same way he did in Ricco Harbor. After Gooper is defeated, Mario can go through the hole he was sitting on, and collect the Shine Sprite.

Trivia
Trivia
*Despite Yoshi not appearing in any of the Noki Bay episodes, a version of the Noki Bay theme music with Yoshi's bongo drums can be found in the game's coding. This is the only main course from Super Mario Sunshine to have this distinction, not counting Corona Mountain.
*Noki Bay's method of entrance (it is accessed by viewing the sun while having Mario stand inside an aura of light in Delfino Plaza) is most likely a reference to the method of entrance of the Wing Cap switch course in Super Mario 64.
*This area has the most bosses in Super Mario Sunshine, with a total count of three bosses (excluding Shadow Mario/Bowser Jr.).
*It is possible to go to the other half of the main cliff Noki Bay is on, where the player can see many platforms.
*This area is one of two areas without the sunglasses vendor, the other being Sirena Beach.
*Unlike all the other parts of Isle Delfino, the residents of Noki Bay are not suffering from a heat wave, as mentioned in the Tourist Guide.
*Noki Bay is only visible in Pianta Village. Only Corona Mountain can be seen from Noki Bay.
*Noki Bay is the only level in the game where Piantas are not encountered, and also the only area in which Yoshi cannot be found, possibly due to the large amount of water.
*On Episode 1, the player can see one single Bullet Bill setting against the closest stand for the cannon platform for the Monty Mole.
*Noki Bay is the only area in Super Mario Sunshine that doesn't have a Italian translation.
*In the Red Coins in a Bottle episode, there is a book in the rock structure at the bottom of the bottle, which can be seen by entering a hole in the structure and going in first person view.
