All-Terrain Vehicles, abbreviated as ATVs (known as Quad Bikes or just Quads in the British English version) are vehicles first appearing in Mario Kart 8, alongside karts and bikes. Like the bikes, Princess Peach, her metal form, Princess Daisy, and Rosalina wear their biker outfits while riding ATVs. Characters riding ATVs also perform bike animations, such as the same tricks, but only the ones that they would use while riding on a standard bike. However, the idling and drifting animations are somewhat different. Additionally, ATVs can perform the fire hopping and demon sliding techniques, but only in Mario Kart 8.

The basic model of the ATV for all characters is the Standard ATV, a quad bike showing the character's emblem over the plate on the front and on the sides of the rear. The color of a Standard ATV also changes, matching the character's custom color. Four different ATVs are available in the game, with the Bone Rattler being made available after downloading the Animal Crossing × Mario Kart 8 DLC pack.

The game classifies all the ATV vehicle bodies as "Karts", as the player can still see CPUs using the Standard ATV body whenever the player restricts the CPU vehicle body options to "Karts Only".

Two new ATV vehicles, Splat Buggy and Inkstriker, appear in Mario Kart 8 Deluxe for the Nintendo Switch. Both vehicles are based on Splatoon, and appear alongside the new Inklings introduced in this game.
