Throughout the Mario series, Eggs have many uses.
History
Super Smash Bros. series
In all Super Smash Bros. games, eggs have made an appearance as an item. They can be thrown at opponents, or eaten for health. They are sometimes released by the Pokémon Chansey. In Super Smash Bros. Melee's Mushroom Kingdom II stage, Birdo appears shooting her 2-D eggs from Super Mario Bros. 2. These eggs travel in a straight line and cause minimal damage, but they can be picked up and thrown for considerably more damage. A spotted Yoshi Egg also appeared once in an Event Match.
Paper Mario series
Paper Mario
In Paper Mario Eggs restore five HP and make a Fried Egg when cooked. Eggs are quite rare in the game, and the only source of them is finding them in the grass at the station of Mt. Rugged, or in Jade Jungle when certain vines are pulled. When mixed with a Fire Flower it becomes an Egg Bomb.
Mario Kart series
Mario Kart: Double Dash!!
In Mario Kart: Double Dash!!, the Egg is a special item.
It is exclusive to Yoshi and Birdo. Collision causes the player to crash, and spills three random items onto the track. This can include Green Shells, Mushrooms, Bananas, and maybe a Star or Bob-omb. Unlike a Red Shell, it breaks after a certain amount of time if it doesn't get to its target. It does not stop rolling until it rolls an entire lap or collides with a driver.
Mario Baseball series
Mario Superstar Baseball
In Mario Superstar Baseball, the egg is a special Item that Yoshi needs to use his Power Shot, the Egg Ball. However, the item is only available in Challenge Mode, as Yoshi can use the Egg Ball anytime in Exhibition Mode. Yoshi has to buy this item from the local shop near Princess Peach's Castle, and after buying the Egg, is able to use Egg Ball as many times as he wants, so long as he has the star power to use it. The Egg is modeled after a Yoshi Egg.
Mario Party series
Mario Party 7
The Egg Orb appears in Mario Party 7 as Yoshi's and Birdo's special. When Yoshi or Birdo uses it, they can eat Characters spaces and turn them into eggs, they can also eat Koopa Kid Spaces but can't turn them in to orbs.
Mario Party Advance

Types of Eggs
Yoshi Eggs

The spotted Yoshi Eggs are white with specifically-colored spots.
Yoshi Eggs are able to be used as projectile weapons--mainly by the Yoshis themselves.
Birdo Eggs

Although recent discoveries have proven that Birdos can spit pink Yoshi Eggs, most Birdo Eggs are non-spotted. A Birdo will spit Birdo Eggs out of its cannon-like snout, and use the eggs like bullets. The player can jump on these to get a free ride, and sometimes, like in level 4-3 of Super Mario Advance, a birdo egg had to be ridden.
Mystic Egg
- Main article: Mystic Egg
Found only in the Boggly Woods, Mystic Eggs are from an unknown creature. Nobody knows where to find them except the Puni girl, Petuni. For a certain favor, Mario can obtain Mystic Eggs from Petuni during the events of Paper Mario: The Thousand-Year Door. Like in its prequel, the egg recovers five HP and may be used in all sorts of recipes.
Trophy Information from Super Smash Bros. Melee
Eggs are basically the same as Capsules, in that they'll release items when you break them open. They've been known to explode, too. The likelihood that certain items may be inside Eggs depends on the type of stage being played. Sometimes Eggs will contain health-replenishing food items; other times, they may hold weapons.
