The Donkey Kong Universe refers to anything in the Donkey Kong games. Places, items, characters or anything related to Donkey Kong is part of the Donkey Kong Universe. However, a lot of games made by Rare, Ltd. include references and/or tie-ins to other Donkey Kong Universe games.
